What we're looking at here with the harmony is almost entirely 3rds. There are some pretty 6ths, but only a few 4ths and 5ths. Mostly, the voices move in the same direction, making it more intuitive for beginners.

That high G note will likely be no problem for the youngest singer, whose voices are so easily able to soar.
For children who attend church, this is probably a melody they already know. For years, perhaps, they've been hearing this song at Christmas gatherings and holiday concerts and recitals. Therefore, their "musical ear" is well-prepared to make harmony to the soprano line melody.
Therefore, in teaching your singers simple alto lines such as this, you are giving them an ability to add harmony to Silent Night - and other Christmas carols - for the rest of their lives!
