The melody presents a challenge to young kids playing violin -- how do you bow the phrases?
For a couple of my beginning students who had to learn the piece in a hurry in order to perform with a group of older kids who have played Road to Lisdoonvarna for a few years, it was difficult to get their speed up.
I recommended that they bow twice a measure, slurring beats 1 to 3 together, and beats 4 to 6 together.
This is a skill violinists grow into, but for some kids it's a stretch! Some of the fiddlers in different YouTube performances do a lot of slurring, but mix it up as well.
For guitarists, playing in second position works very well in this song (that is, playing finger 1 over fret 2, and finger 2 over fret 3, and finger 3 over fret 4, etc.), and this is a good melody for introducing that concept to your beginners.
The version below is slightly easier (just in line 1), but it is a popular way to play the song here in our town:

The video below features an unusually slow but irresistible rendition of Road to Lisdoonvarna, first on guitar, and then (played by the same artist) on the fiddle.
I love it! Ask your students what they think.
This song is also great when paired in a medley.
I see that others have paired Road to Lisdoonvarna with Swallowtail Jig; my daughter's fiddle group leader used Cam Ye Oer Fra France together with this song, and it worked well.
